Easy Strawberry Compote

A simple, quick strawberry compote made with just five ingredients — sweet, slightly tangy, and ready in 25 minutes. Perfect over pancakes, oatmeal, or vanilla ice cream.

Ingredients

  • 3 cups strawberries fresh or frozen, hulled and quartered
  • 3 tbsp honey or maple syrup
  • 3 tbsp lemon juice
  • 1 tsp vanilla extract
  • 1/3 cup water
  • 1 pinch salt


Instructions

  • Place all of the ingredients in a medium saucepan. Cook for 15–20 minutes over medium heat. The water will simmer and the strawberries will break down. Once the strawberries have broken down and the compote is your desired thickness, remove from heat.
  • Let the compote cool completely. The sauce will thicken further as it cools.
  • Serve over pancakes, vanilla ice cream, or oatmeal. Store leftovers in an airtight container in the fridge for up to 5 days.
